Beyond Tanzania is hiring an Executive Chef for the 5-star &Beyond Grumeti Serengeti River Lodge on a 2-year fixed-term contract. The role leads culinary operations for both guests and staff, overseeing seasonal menu design, fine-dining styling standards, dietary customization, stock controls, and chef mentorship in a luxury safari lodge environment.

- Experience Required: Minimum 2 years of kitchen management experience (ideally in a 5-star or ultra-luxury safari lodge environment)

Role Purpose & Core Responsibilities
- Culinary Excellence & Styling: Oversee guest and staff food operations; design seasonal menus tailored to guest demographics and available local produce; uphold presentation standards per the &Beyond Styling Guide and culinary brand identity.
- Guest Interaction & Personalization: Greet guests upon arrival, gather culinary feedback, manage dietary requirements, and deliver custom fine-dining and bush-dining experiences.
- Kitchen Administration & Cost Control: Manage stock orders, inventory rotation, and kitchen budgets; maintain equipment; manage chef rotas, staff files, and kitchen hygiene/HAACP standards.
- Team Development & Mentorship: Train, mentor, and upskill junior chefs and “stars in training”; foster fair discipline, positive morale, and open communication across lodge departments.
Qualifications & Competencies
- Education: Formal culinary qualification from a recognized institution.
- Experience: 2+ years of culinary management in 5-star hospitality or remote luxury lodges.
- Key Skills: High-end menu creation, stock control, staff leadership, dietary management, basic computer literacy, and familiarization with broader lodge operations (housekeeping, butler service).
- Attributes: Passionate, highly detailed, guest-focused, meticulous, and adaptable to remote wilderness lodge life.
